I spent the afternoon with my friend Robert at his test kitchen for Kings County Jerky. They run the operation from their sun-soaked, immaculate, high-tech commercial kitchen located in an industrual loft building in East Williamsburg. Brooklyn. And when I say immaculate, this kitchen is literally spotless. Robert was preparing the beef and I grabbed a few pics of the process. They use the best quality pasture-raised, grass-fed beef from local farms. They toast and grind their own spices and only use all-natural ingredients.
